These days, you might not be able to go as creative as you’d like in the kitchen, and that’s okay! There are still plenty of opportunities to liven up your next meal or snack with just a handful of ingredients. Today we’re sharing 5 different toast recipes that are completely customizable to what you have on hand, and versatile enough to be your next breakfast, lunch or snack!
1. Caprese Toast
After toast comes out, spread with butter if using then immediately top with mozzarella. You might need to microwave for 10-15 seconds to get the cheese nice and melty. Top with sliced tomatoes and basil. This also works well as a Caprese grilled cheese with an extra slice of toast on top!
2. Monkey Toast
Top toast with a generous spread of peanut butter. Sprinkle on chocolate chips and top with sliced banana. Finish with a dash of chia, flax or hemp seeds if you have them on hand for an added nutrition boost. Yum!
3. Pizza Toast
Once bread comes out of the toaster, immediately top with a cheese slice or shredded cheese. You might need to throw it in the microwave for a few seconds to fully melt it. Heat up a small amount of pizza or marinara sauce in the microwave and spread a thin layer over the cheese, then pile on the toppings. We like throwing our veggie toppings in a pan for to sauté them for a more “authentic” pizza flavor, but fresh will also work! Sprinkle on some seasonings and fresh parmesan and enjoy!
4. Fruity French Toast
Beat egg, vanilla, milk and cinnamon a bowl. You can also use just an egg if you don’t have vanilla, cinnamon or milk. Dip a slice of bread in the mixture to coat both sides. Cook bread in a nonstick skillet or griddle until golden on each side. Top with fresh fruit and a drizzle of honey if desired.
5. Avocado Breakfast Toast
While your bread is toasting, fry an egg in a skillet (scrambled will also work!). Fry up the bacon if using. Mash avocado while the egg cooks. Once the toast comes out, top with mashed avocado, egg and bacon. If you have bacon, you probably won’t need any other seasonings. Otherwise, top with some crushed red pepper flakes for a little spice and salt and pepper to taste.
