Blueberry Buckweat Energy Bars 
Eat a raw energy bar each day for an easy way to get packed nutrition. You can make a big batch every few weeks and store them in the refrigerator or freezer. 
Ingredients: 
  • 1 cup pitted and soaked medjool dates 
  • ¼ cup fresh or frozen blueberries 
  • ¼ cup whole raw walnuts 
  • ¼ cup chopped walnuts 
  • ¼ cup ground flaxseed 
  • ¼ cup unhulled hemp seeds 
  • ¼ cup hemp protein (non flavored) or your favorite protein powder (either berry or non-flavored) 
  • 1 tablespoon coconut palm sugar 
  • ½ cup sprouted buckwheat 
  • ½ cup frozen blueberries sea salt 
 Instructions:
  1. In a food processor, combine the dates, ¼ cup fresh or frozen blueberries, whole walnuts, flaxseeds, hemp protein, palm sugar and salt to taste. Process until desired texture is reached. The less you process, the crunchier the bar will be.  
  2. Transfer mixture to a bowl and mix in the buckwheat, chopped walnuts, and blueberries with your hands.  
  3. To shape into balls, use a spoon or your hands to scoop the mixture and roll between your palms. 
  4. To shape into bars, turn mixture on a work surface. Flatten with your hands. Place a sheet of plastic wrap on top and then roll with a rolling pin to desired thickness. 
  5. Place into the fridge for about 5 hours.
