Rinse and dry your sweet potato. With a fork, poke a few holes throughout the potato. Wrap in a damp paper towel and microwave on high for 3-4 minutes depending on the sweet potato’s size. Let cool for 2 minutes, then carefully peel the sweet potato using a knife and a fork so you don’t burn your hands. The peel should come off easily, but the inside will still be hot! Transfer to a bowl and mash to desired consistency. While still warm, add in nut butter and honey to taste. Mash to combine. Sprinkle on cinnamon and toppings of choice and enjoy!
