Banana Bread Mug Cake
In light of banana bread’s recent rise to fame as the “official comfort food of the coronavirus quarantine”, we thought we’d share a quicker, individual version of this classic that you can whip up in under five minutes - a banana bread mug cake! As a bonus, this low-maintenance recipe is made with wholesome ingredients and contains no added sugar. We’ve used this as a pre-workout snack and even paired it with a cup of coffee for a filling breakfast alternative!
Grease a large coffee mug with nonstick spray. Mash your banana in the bottom of the cup. Add egg, milk and honey (or agave) and whisk together with a fork until combined. Add flour, baking powder and cinnamon and stir until combined. Gently fold in desired mix-ins. Microwave on high for 2 ½ to 3 minutes depending on microwave strength and mug size. Careful removing the mug – it will be hot! Give it a few minutes to cool, then add additional toppings as desired. Top with a dollop of yogurt or whipped cream and enjoy!
